A Dinner at the former ECA House
calitri tradizioni
Typical Christmas season sweets were scarpegghij', globs of leavened flour, deep fried in oil and then drenched in honey or sprinkled with sugar.
Customary at Easter time were the p’cc’latiegghij’ (a kind of doughnut with a hard boiled egg at the center and covered with two cross shaped strips of dough), and the scallatiegghij’ (doughnuts flavored with salt, pepper, fennel seeds, boiled and then baked).
Other very popular foods were special cheeses and varieties of sausage: caciocavallo, (butirr’), a kind of butter enclosed in cheese globules, pecorino cheese, goat cheese, prosciutto, salami, and hot sausage.
Finally, bread was a highly prized staple.
