Christmas season sweets were scarpegghij',
globs of leavened flour, deep fried in oil and then drenched in
honey or sprinkled with sugar. |

at Easter time were the p’cc’latiegghij’
(a kind of doughnut with a hard boiled egg at the center and covered
with two cross shaped strips of dough), and the scallatiegghij’
(doughnuts flavored with salt, pepper, fennel seeds, boiled and
then baked). |

Other very popular foods were special cheeses and varieties of sausage:
caciocavallo, (butirr’), a kind
of butter enclosed in cheese globules, pecorino cheese, goat cheese,
prosciutto, salami, and hot sausage. |
| Finally,
bread was a highly prized staple. |
